Ingredients 

2 tbsp. olive oil
1 medium onion (finely chopped)
1 pumpkin (medium sliced)
2 c. rice
3 tbsp. white wine (your choice)
6 c. chicken broth
1 sprig fresh rosemary
5 dried Porcini mushrooms
2 tbsp. butter
3/4 c. Parmesan cheese (grated)
Salt and pepper (amount varies by taste)

Instructions

Heat olive oil in a saucepan. Add chopped onions and stir until they are soft. This should take about 5 minutes. Then add pumpkin slices and cook for 8 minutes. Basically stir until pumpkin slices have softened. Next step is to add rice and a touch of wine and evenly mix everything until properly combined.

Next you add 3 cups of chicken broth, rosemary, and mushrooms to rice mixture. Bring to a boil and continue stirring. As broth is absorbed, add more, ½ cup at a time. You should cook until rice becomes slightly al dente. Consistency should be creamy and porridge-like. This step will take about 20 minutes. Then add butter and 1/3 cup Parmesan and combine. Season with salt and pepper and serve with a drop of delicious Slocal pumpkin oil.
